Profit block producers can extract by reordering or inserting transactions.

MEV includes arbitrage between DEXs, sandwich attacks on user trades, and liquidations on lending protocols. On Ethereum, MEV is a multi-billion dollar industry now largely intermediated by builders and relays (MEV-Boost).
